Equal parts day-old white bread (but please don’t use Wonder Bread!) torn in very small pieces and oats, amounts depending on the size of the turkey, a small onion finely chopped, and only salt and pepper for seasoning. Mix it all together and add enough melted butter to moisten the mixture but not make it soggy. Nothing was cooked before stuffing the turkey. Most of the stuffing was moist but the stuffing in the neck was drier and somewhat crunchy, and my sisters and I were always vying with my father for a bit of the neck stuffing! My grandparents came to the US when my dad was seven. Grandma never had the recipe written down so when I started having my own Thanksgiving dinners (grandma was gone by then) I had to picture her making it from my memory. It was important for me to pass on her tradition. My recipe is similar but mine uses 2 large, coarsely chopped yellow onions, soften in enough butter to slightly coat a similar amount of long cooking rolled oats. The even ratio keeps the stuffing moist without adding any liquid. Continue stirring until oats are coated (10 or more min.). I add 1/2+ bunch of chopped parsley, salt, pepper & Bell's poultry seasoning to taste (don't under season). Turn off heat. I put the lid loosely on the pan, let cool slightly before stuffing the bird. You certainly could add finally chopped, cooked giblets to the mixture if desired.
